My Favorite Christmas Cookie & More Christmas Home Tours!

Hello friends!

My annual cookie exchange is this weekend, and I’m so excited, as I look forward to it every year.  Given that it’s the season to gorge ourselves enjoy holiday goodies, I thought I would share my staple Christmas cookie recipe – Dipped Gingersnaps.

Now, I love chocolate more than the average person, so these are a bit unexpected, but trust me, they are the bomb.

Typically, I’m not a big white chocolate lover, but the mix of the white chocolate and the chewy gingersnap cookie is just perfection.  So, today I’m sharing the recipe with you!

Dipped Gingersnaps
2 cups sugar
1 1/2 cups vegetable oil
2 eggs
1/2 cup molasses
4 cups all-purpose flour
4 teaspoons baking soda
1 tablespoon ground ginger
2 teaspoons round cinnamon
1 teaspoon salt
Additional sugar
2 12-ounce packages “white chocolate” (white bark coating)

Preheat oven to 350 degrees.

In a mixing bowl, combine the sugar and oil; mix well.  Add eggs one at a time, beating well after each addition.  Stir in molasses.  Combine dry ingredients.  Gradually add to the creamed mixture and mix well.  Shape into 1-inch balls and roll in sugar.  Place 2 inches apart on ungreased baking sheets (or parchment paper-lined cookie sheets).  Bake for 10-12 minutes, until the cookie springs back when touched lightly.  Remove to wire racks to cool.

Working in batches so the dip doesn’t harden, melt the white chocolate in batches in the microwave or saucepan over low heat.  Dip the cookies halfway; shake off the excess.  Place on waxed paper-lined baking sheets to harden.  Continue with remaining cookies.

To store: layer, separated with waxed paper, in sealable plastic containers (these are great to make ahead and freeze!).

And her family room is so warm and welcoming!  Can I say how jealous I am of her warm weather down in Texas?

    Jenny, those cookies looks so soft and chewy and I love the twist of them dipped in white chocolate. I will have to try them! Thanks for sharing!

    Jenny, you're reading my mind!! I just pinned Ina Garten's ginger snap cookies a couple days ago, but these just went to the top of my list!! Not sure that I should thank you, they look really dangerous! 🙂
